Cheese is a dairy product existing in real life and the Mario franchise alike. It first appears in various Nintendo Comics System comics, but would not have a gameplay role until Donkey Kong 64.
Description[]
Cheese is one of the primary ingredients used for most varieties of pizza. Cheese is also used to make certain varieties of pasta as well, such as cannelloni, lasagna and macaroni. Mario-related, cheese-based products, such as Super Mario Kraft Macaroni & Cheese, have also struck up appearances on Earth.
On Earth, it is traditional for one to say "cheese" when getting his or her picture taken. This tradition of having a photographer declare "Say cheese" was actually referenced in Mario & Luigi: Superstar Saga (where a Koopa Troopa photographer gave Mario the similar command of "Say Cheep-Cheep" in a certain scene) and even directly used in the Japanese version of that game.
In Donkey Kong franchise[]
Donkey Kong 64[]
There is an old, moldy piece of cheese in a trash receptacle in Creepy Castle. Tiny Kong can enter it using her Mini-Monkey ability and make her way to the top.
Donkey Kong Country: Tropical Freeze[]
Cheese can be seen in the levels Crumble Cavern and Rodent Ruckus.

Cheese does not appear, but it is the namesake of the Cheese Bridge Area.
Super Mario Odyssey[]
Cheese exists in the form of Cheese Rocks, which function both as platforms and obstacles. They are the result of being left near lava and drying out completely.
Mario Kart series[]
Mario Kart: Super Circuit[]
A course named Cheese Land makes an appearance. As its name indicates, Cheese Land is themed around cheese, with several cheese structures appearing in the background and off-road areas of the course. The course appears to have a moon-like setting, referencing the misconception that the moon is made of cheese.
Mario Kart 8 / Mario Kart 8 Deluxe[]
GBA Cheese Land returns as classic course. A major difference is that cheese no longer appears to have a moon-like inspiration. There are also small blocks of cheese in the off-road areas that act as minor breakable obstacles, and there are several large cheese blocks in the off-road areas that can be crashed into.
Luigi's Mansion[]

Cheese is an object with the appearance of a triangular prism consisting of several holes. Luigi can scan cheese with the Game Boy Horror's Search Function to reveal a Gold Mouse, which he can suck up to get treasure, including jewels. Cheese is featured only in darkened rooms and disappears when the room is lit up. However, unlike with Speedy Spirits, Luigi gets a second chance to catch the Gold Mice he missed, during the Blackout.
There is a total of five cheese:

- Fortune-teller's Room - Behind Madame Clairvoya's chair
- Dining Room - Under the chair next to Mr. Luggs
- Tea Room - Behind the left table
- Safari Room - Between the crates and the armchair
The Study also has a book called Darkness is Their Cheese that talks about the effects of cheese on Golden Mice in the dark.
The Waiters serving Mr. Luggs appear to be carrying cheese on their plates. Luigi is required to vaccum up the cheese while Mr. Luggs is eating it to anger him and initiate a battle against him.
Paper Mario series[]
Paper Mario: The Thousand-Year Door[]
Cheese was mentioned in one of Goombella's Tattles for the Moon. She theorized that Moon Clefts might "live on green cheese". She later told Mario that she was only kidding in saying that, but then whispered to herself that she was "bummed that there were only rocks" on the Moon, implying that she once believed in the clichéd joke that the Moon was made of cheese.
Super Paper Mario[]
Cheese is briefly mentioned when Mimi states that her favorite smell is Old Cheese. A cheesy, seemingly Cheese-It-like snack known as Nibble-Ums can also be optionally referenced in Super Paper Mario by talking to Francis (who states that he'll need some extra food and energy to create Tiptron Mk. II and orders his Meowmaids to fetch him some of these Nibble-Ums) after buying Tiptron from him.
Mario & Luigi: Bowser's Inside Story + Bowser Jr.'s Journey[]
Cheese is used to restore 15 BP for Bowser, replacing the function of Syrup Jars from the original Mario & Luigi: Bowser's Inside Story. Cheese are useful items to deal with bosses with high HP and Defense.
In Wario franchise[]
Wario Land 3[]
During the boss fight with Pesce, flies carrying rancid cheese periodically enter the arena. Wario must bump into these flies to make them drop the cheese into the water. If the cheese drops close to Pesce, it will eat the cheese. Pesce is defeated when it eats three pieces of cheese.

A Mouser shows off his cheese in "A Mouser in the Houser"
Cheese has a relatively large role in "A Mouser in the Houser." The comic introduces a large log of cheese known as the Sacred Cylinder of Cheese, which King Toadstool was rather fond of for unconfirmed reasons (although most other people found it to unimportant and even stupid). "A Mouser in the Houser" also revealed that the Mousers (who, after their leader's betrayal of their race, had eaten little more than stolen vegetables) loathed cheese and even had a limited fear of it. The fact that peoples' assumptions that they liked it, as well as the fact that most Mousers' peers awarded them with large amounts of cheese on special occasions, made things only worse for them. In the end, when cornered by an angry Mouser and with no other options, Princess Toadstool (who was once one of the few people who could respect the Sacred Cylinder of Cheese) ended up sacrificing the Sacred Cylinder to the Mouser, who was then stunned by memories of past cheeses long enough for Mario and Toadstool to escape.
In "Betrayal Most Proper," cheese is referenced in the form of one of several phrases displayed on King Toadstool's newest crown was "The Big Cheese," in reference to the king's power.

"Sag niemals Holerö!"[]

The word "Holerö," sung by alien-in-disguise Heini, turns all Swiss into cheese.
The comic is centered around the word "Holerö" which, when pronounced, would turn everyone into a kind of food typical of the country the person lived in. When Mario was spending his vacation in Switzerland and the word was pronounced, all the people around him turned into cheese, since Swiss cheese is a typical feature of this country. The cheese people still had eyes, a mouth, and legs, and where able to walk and ski.

Cheese is one of several food items, restoring three percent of the player's health. It also makes minor appearances as a part of other items, such as the hamburger, where it is a type of condiment.
