The Butler, Scolding (その執事、説教, Sono Shitsuji, Sekkyō) is Chapter 178 of the Kuroshitsuji manga.
Summary[]
Sebastian gives Baldroy the task to roast a chicken to redeem himself and admits that he did not explain the process well the last time; after all, he was in the belief that everyone could roast meat properly. Baldroy is annoyed at his words, and Sebastian proceeds with his explanation:
After gutting the chicken, age it in larger for a few days. Then, the chicken has to be plucked and stuffed with minced meat with spice and eggs. When the chicken is stuffed, a spit is passed through the chicken which is then cooked over an open fire. While it turns, meat juice drippings and butter are poured over it. The roasted chicken is served with gravy.
When Sebastian is done with his cooking instruction, he tells Baldroy that he has already prepared the chicken and that he only has to roast and baste it now. He should be able to do this as even dogs can turn spits; dogs were used for this purpose until they were replaced by automated smoke jacks. They have an automated smoke jack, but Sebastian insists that Baldroy turns the spit himself so that it is less likely that he will turn his eyes off the chicken and let it burn. Baldroy asks him why he should even put that much effort into roasting meat, and Sebastian answers him with a quote by a royal chef: "To see the very best smile of those who eat the dish." Those words make Baldroy think of a woman who once told him that he always looks like he is enjoying the food.
Then, Sebastian leaves, and Baldroy turns the spit. At some point, Finnian comes into the kitchen to inform Sebastian that he finished weeding the vegetable garden. Baldroy tells him that Sebastian left, and Finnian goes to warm himself by the oven which makes Baldroy think of a little boy. He shakes the memory away, and Mey-Rin comes to talk to Sebastian too. As he is not there, she tells Finnian instead that Old Man Sam brought them cheese and milk and meat, but it is so much, she cannot carry everything on her own. Finnian offers to help, and they exit the kitchen. Yet again, Baldroy is reminded of the woman and the boy who were killed and whose house was set on fire. He becomes so immersed in the memory that he burns the chicken again. He is only torn out of his thoughts when Sebastian barges into the kitchen to tell him that the chicken is on fire.
Sebastian says that he should try to find out how not to waste burned chicken. Mey-Rin and Finnian inspect the burned chicken and say that it tastes bitter and awful. Baldroy retorts weakly that it is fine if it is edile.
