Making moonshine.

Moonshine was a clear, hand-made alcohol distilled from grain using a still.

Also known as white lightning, it was 198 proof, a nearly pure ethanol. (TOS novel: Mindshadow)

On old Earth, people who distilled illegal moonshine were called bootleggers. (SCE novella: Collective Hindsight, Book Two)

History[]

In April 2063, the Crash & Burn bar smelled of moonshine, a smell that gave Lily Sloane a headache. Zefram Cochrane drank ten shots of it. He also christened Phoenix with a bottle of it. (TNG novelization: Star Trek: First Contact)

In 2253, Bob Brien and Montgomery Scott distilled moonshine from a still hidden in engineering aboard the USS Enterprise. Unknowingly, however, the pipes had been been exposed to gamma rays, which made the resulting ethanol particularly intoxicating. Luckily, the effects were not permanently damaging. Afterwards, Chief Engineer Caitlin Barry informed her staff that the production of moonshine would no longer be tolerated on the Enterprise, even though it had been something of a tradition in Starfleet. In 2255 in the Kelvin timeline, in James T. Kirk's dormitory at Starfleet Academy, Leonard McCoy offered him some moonshine crafted from a Mississippi home recipe. Kirk called it "swill" and coughed after the second swig. (TOS - Starfleet Academy novel: The Delta Anomaly)

In 2270, James T. Kirk brought Leonard McCoy a decanter of moonshine as a peace offering. One shot of it numbed all pain. Officially the captain was unaware that a still in engineering produced the illegal beverage, but he was able to get some from former security chief O'Shay. (TOS novel: Mindshadow)

In 2270 while a Tomariian prisoner, Scott distilled a strong moonshine from a dandelion-like plant. He often shared it with IIob, his captor. (TOS novel: Black Fire)

In 2270 during a visit to Yonada, Keridwen Llewellyn poured McCoy a drink of moonshine. (TOS novel: The Lost Years)

Lumberjacks still made moonshine in Alaska in the 24th century. (TNG novel: Debtor's Planet)

In 2350, Benjamin Sisko used to drink moonshine whiskey with his father Joseph Sisko in Louisiana. He recalled that it went down roughly, burning the throat on its way to his stomach. (DS9 novel: Vengeance)

In 2375, while competing in a pan-dimensional contest, Tom Paris kept his focus by reminding himself he was not a pilot competing for moonshine or holoprograms. (VOY - String Theory novel: Evolution)
