Buttermilk Oatmeal Raisin Muffins: Makes 12 (4 points +)
Mix the buttermilk with the oats and let stand for 5 minutes. Meanwhile mix the flour, baking powder, baking soda and salt in a small bowl. Beat the applesauce, sugar and egg until blended. Add the oatmeal mixture to the applesauce mixture. Then add the flour mixture until moistened. Stir in the raisins.
Spoon into 12 muffin cups coated with cooking spray. Bake at 400 degrees for 20 minutes or until done.

- 1 c. quick rolled oats
- 1/2 c. unsweetened applesauce

- 1 egg
