The Color Fixing is a fundamental cooking technique used to keep the color of an ingredient from changing[1]. A mix of saltwater is used to preserve the tone and radiance of the colors.
Komatsu made a saline water out of Delicineral Water and Taste Salt to prevent the color of the grains of Colored Rice from changing, which was required to develop an easier method to cook the Medicinal Mochi. In the case of the aforementioned rice, this mix also made the grains get divided by color.
