There are 667, however only 100 of these awards are unique due to the "stages" counting as individual awards.

When Bounty Hunters target you, do not attack or have your weapon out.
You will see an option in the bottom right to Surrender.
It is best to only do this with NPC bounty hunters because most likely kill you and turn your body in which will cut your time spent in jail in half relative to your bounty amount.
You will see at the very beginning at the top left if its a player bounty because it will say Player Bounty Hunter. If its NPC it will say Bounty Hunter.
