Haggis was a dish native to Scotland on Earth.

Haggis consisted of a mixture of minced heart, lungs, and liver of a sheep or cow, and was mixed with suet, onions, oatmeal, and a variety of seasonings. The mixture was then boiled in the stomach of the animal. (TOS novel: The Klingon Gambit)

It was traditionally served with turnips or clapshot at New Year's Eve and Robert Burns suppers. In modern times Scottish cooks might substitute a plastic haggis bag for an animal's stomach, but when neither was available, a plastic baking bag or large sausage casing could serve the purpose.

Montgomery Scott shared a traditional recipe with Nurse Christine Chapel that served 12-20 people. The recipe included the sheep's stomach, as well as its liver, heart, and lungs, as well as beef suet, onions, salt, pepper, red pepper, spices, oatmeal, and broth. "Pot haggis" yielded a smaller amount than the regular recipe and was simpler to make, requiring lamb liver, Spanish onion, water, beef suet, oats, salt, pepper, marjoram, and broth, and optionally a lamb heart. Scott was fond of Haggis and would prepare it at times. During Kevin Riley's first year on the USS Enterprise, Scott attempted to serve Riley some Haggis at a party, much to Riley's horror. (TOS novel: Probe)

After a conflict with Ambassador Robert Fox, Scott remarked that the haggis was surely in the fire, but that he would not trust the government of Eminiar VII until he determined what happened to Captain Kirk. (TOS episode: "A Taste of Armageddon")

In 2409, a Nausicaan warrior aboard Jurlek's bird-of-prey told the ship's second officer that were was only one Human delicacy, called haggis. (STO - Tutorial mission: "End of Watch")
